A Craving

I have been craving potato soup since Saturday morning. My mom was staying with me and asked me what I wanted to eat. Whenever I'm sick I want potato soup. So she took me grocery shopping and bought me some Potato Leek soup made by Imagine Natural Creations. I didn't feel like eating anything after we got home from the grocery store; Mom drove back to her house 9 hours away; and I took a nap.

The whole pain in the side persisted throughout Saturday and into the night. I wanted my soup but wanted something a bit more chewy than just the potato leek broth so I improvised with supplies on hand. While I was cooking my soup the pain in my side worsened so badly I ended up going to the ER last night. Turns out a singular kidney stone is actually multiple kidney stones and an ovarian cyst. Yay, me! Either do it up big or don't do it at all, right?

Anyway, this is the soup I made with the lazy and non-lazy recipes.


Lazy Soup Recipe
Day after completion
I went to the ER in severe pain 20 minutes after it was finished--laziness justified.

Lazy Version

Bag frozen Potatoes O'Brien
1 qt Imagine Potato Leek Soup
Paprika


Non-Lazy Version

Cubed potatoes
Diced red, yellow, orange bell peppers
Diced Onion
Imagine Potato Leek Soup
Grapeseed Oil
Sea salt

Optional: Mrs Dash, garlic, seasoning of your choice, cubed ham, celery

Toss potatoes and peppers in a bowl with grapeseed oil, sea salt, and any optional seasoning until throroughly coated. Spread mixture on a baking sheet. Roast potatoes and peppers in the oven at 400º F for 45-60 minutes--until golden brown.

Sautée Onions in butter until they are a golden transluscent color. Set aside.

When the potatoes and peppers are roasted and onions sautéed, mix together in large stock pot or crock pot. Add Potato Leek soup. Heat until it's bubbling and a golden skin coats the top of the soup. That's how I know it's done.

Garnish with paprika, bacon bits, sour cream, cheese, chives, or any other favorite potato topping.

    1. Thank you. At least I now know what is going on. I don't handle ignorance well. That soup tastes better than it looks!
