Two of my siblings and I have been diagnosed with Celiac Disease in the past 2 months. It was a bit overwhelming at first to me. I went through all the grief stages staying in denial the longest because it's the funnest stage. Today I found out it's not going to be as bad as I thought it was. AND eventually my body will heal and I will feel well again. I have been so used to being sick and exhausted all the time, it just felt normal. It's a bit amazing when someone tells you there's a better way and I don't have to feel like this anymore.
Happily, one of my favorite recipes was already Gluten Free. O Happy Day! Here is that recipe for your taste bud enjoyment and intestinal health.
Purple Passion Soup
1 head Red Cabbage
3-6 Parsnips
1 bag Baby Carrots
1 bunch Celery
Garlic to taste
Herbes Provencal to taste
1 Rotisserie Chicken, debone, or 4-5 Chicken Breasts, broiled
1 Quart Gluten Free Chicken or Vegetable Stock
Gluten Free Bisquick
Chop Cabbage, Parsnips, and Celery into bite-size pieces.
Shred the chicken.
Add all ingredients into a large stockpot, simmer for about an hour.
Mix up Bisquick mix for drop biscuits using parsley and thyme.
Drop biscuit mixture on top of soup and cover for approx. 20 minutes.
Remove lid and enjoy!
For vegetarian variation, simply omit the chicken.
